Gravy Base
- 3 Tbsp all-purpose flour (or use Gluten-Free 1:1 flour)
- 3 Tbsp fat drippings from roasted turkey (or butter if needed)
- 2 cups turkey drippings (skimmed of fat; add water or broth if needed to make 2 cups)
Additional Liquids and Seasoning
- 1/4 cup milk, stock, or water (adjust for desired consistency)
- Salt and pepper to taste

- Prepare the Drippings: Once your roasted turkey has been removed and is resting, strain all drippings from the roasting pan through a fine mesh sieve into a large measuring cup, discarding solids. Let it sit so fat rises to the top and broth settles at the bottom.
- Separate Fat: Skim off 3 Tbsp of fat from the measuring cup and transfer it to a medium saucepan. If you lack enough fat, add butter to make 3 Tbsp. Discard the excess fat left in the measuring cup and ensure about 2 cups of broth remain. Add water or broth if necessary to reach 2 cups.
- Create Roux: Heat the saucepan over medium heat until the fat starts to sizzle. Whisk in 3 Tbsp flour and stir continuously until the mixture is well combined and begins to turn a light golden brown, about 2 minutes, forming a roux.
- Add Broth: Gradually whisk in the 2 cups of turkey broth, stirring constantly to prevent lumps. Bring the mixture to a gentle boil while continuing to whisk.
- Adjust Consistency and Season: Pour in 1/4 cup milk, stock, or water to reach your preferred consistency. Simmer the gravy for 5 minutes, then season with salt and pepper to taste. Remove from heat, cover, and keep warm until serving. Transfer to a gravy boat before serving as it will thicken slightly upon standing.
