Description

  • 2 cups cooked brown rice
  • 2 cups cooked and shredded chicken breast

Vegetables:

  • 1 cup broccoli florets
  • 1 cup julienned carrots
  • 1/2 cup sliced red bell pepper
  • 1/2 cup frozen peas
  • 1/4 cup chopped green onions

Teriyaki Sauce:

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • 2 teaspoons minced garlic
  • 1 teaspoon grated fresh ginger

Garnish:

  • Sesame seeds for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a saucepan, combine soy sauce, water, honey, rice vinegar, sesame oil, garlic, and ginger. Simmer and thicken with cornstarch slurry.
  3. In a mixing bowl, combine rice, chicken, vegetables, and teriyaki sauce. Transfer to baking dish.
  4. Cover with foil and bake for 20 minutes. Uncover and bake for 10 more minutes until crispy.
  5. Garnish with sesame seeds before serving.

Notes

  • You can substitute brown rice with white rice or quinoa.
  • Use frozen mixed vegetables for convenience.
  • Add red pepper flakes for heat.
