For the Teriyaki Beef:
- 1 pound lean ground beef
- 1 tablespoon vegetable oil
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 3/4 cup water
For Serving:
- 2 cups cooked white rice
- 1 cup steamed broccoli florets
- 1/2 cup shredded carrots
- 2 green onions, sliced
- 1 teaspoon sesame seeds (optional)
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain excess grease.
- Add minced garlic and grated ginger to the skillet. Cook for 1 minute.
- Whisk together soy sauce, brown sugar, rice vinegar, cornstarch, and water in a bowl. Pour into skillet with beef. Simmer until sauce thickens.
- Assemble the bowls by dividing rice among serving bowls. Top with teriyaki beef, broccoli, carrots, green onions, and sesame seeds.
- Serve warm.
Notes
- Ground turkey or chicken can be substituted for a lighter version.
- Add sriracha or red pepper flakes for extra heat.
- Frozen mixed vegetables can be used for convenience.
