For the Teriyaki Beef:

  • 1 pound lean ground beef
  • 1 tablespoon vegetable oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 3/4 cup water

For Serving:

  • 2 cups cooked white rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds (optional)


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain excess grease.
  2. Add minced garlic and grated ginger to the skillet. Cook for 1 minute.
  3. Whisk together soy sauce, brown sugar, rice vinegar, cornstarch, and water in a bowl. Pour into skillet with beef. Simmer until sauce thickens.
  4. Assemble the bowls by dividing rice among serving bowls. Top with teriyaki beef, broccoli, carrots, green onions, and sesame seeds.
  5. Serve warm.

Notes

  • Ground turkey or chicken can be substituted for a lighter version.
  • Add sriracha or red pepper flakes for extra heat.
  • Frozen mixed vegetables can be used for convenience.
