  • 1 pack instant ramen (discard seasoning)
  • ½ lb ground beef
  • 1 tbsp taco seasoning
  • 1 tbsp oil
  • 4 slices thick bread (sourdough or Texas toast preferred)
  • 4 slices cheddar cheese
  • 2 tbsp butter, softened

Instructions

  1. Cook ramen: Boil the instant ramen noodles in water until they are just tender. Drain thoroughly and set aside to cool slightly.
  2. Brown the beef: In a skillet over medium heat, cook the ground beef with taco seasoning until fully browned and cooked through. Remove from the skillet and set aside.
  3. Crisp the noodles: Using the same skillet, add a little oil and fry the drained ramen noodles until they turn golden and slightly crispy, stirring occasionally to prevent sticking.
  4. Assemble the sandwich: Butter one side of each slice of bread. On the unbuttered side of two slices, layer a slice of cheddar cheese, the taco-seasoned beef, crispy ramen noodles, and another slice of cheddar cheese. Top each with a second slice of bread, buttered side facing out.
  5. Grill it up: Heat a skillet over medium heat and cook each sandwich for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted inside.
  6. Serve: Slice the sandwiches in half and serve immediately. Optionally, garnish with sliced jalapeños, chopped cilantro, and your favorite hot sauce for extra flavor.
