Description

A delicious and easy-to-make Berry Cobbler featuring a mixed berry filling tossed with lemon juice and cornstarch, topped with a buttery, crumbly dough, and baked to golden perfection. Perfect for a summertime dessert or anytime you crave a comforting sweet treat with fresh fruit.

Ingredients

Scale

Fruit Mixture

  • 1 ½ cups Blackberries
  • 1 ½ cups Strawberries, sliced
  • 1 cup Blueberries
  • 2 tbsp Cornstarch
  • ¾ tbsp Lemon juice

Dough Topping

  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 1 cup Unsalted butter, room temperature
  • 1 ½ cups Packed light brown sugar
  • 2 tsp Vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the cobbler.
  2. Prepare Baking Dish: Spray a 9”x 6” baking dish with non-stick baking spray to prevent sticking.
  3. Mix Berries: In a large bowl, add the blackberries, sliced strawberries, and blueberries.
  4. Add Lemon Juice: Drizzle the berries with ¾ tablespoon of lemon juice for freshness and slight tartness.
  5. Toss Fruit: Gently toss the berries with lemon juice to combine evenly.
  6. Add Cornstarch: Sprinkle 2 tablespoons of cornstarch over the berries and toss again to coat. This helps thicken the fruit mixture.
  7. Marinate Berries: Let the berries marinate for 20 minutes to release their juices and activate the cornstarch.
  8. Combine Dry Ingredients: In a separate large bowl, whisk together 2 cups flour, 1 teaspoon baking powder, and 1 teaspoon salt. Set aside.
  9. Mix Dough: Using a stand mixer, beat 1 cup room temperature unsalted butter, 1 ½ cups packed light brown sugar, and 2 teaspoons vanilla extract until well blended and creamy.
  10. Add Dry Ingredients: Gradually add the flour mixture to the butter mixture, mixing until the dough resembles small crumbs.
  11. Assemble Cobbler: Pour the marinated berry mixture into the prepared baking dish, spreading it evenly.
  12. Top with Dough: Drop the crumbly dough mixture evenly over the berries, covering as much surface as possible.
  13. Bake: Bake in the preheated oven for 30 minutes, or until the top is lightly browned and the filling is bubbly.
