- 1 tsp Baking powder
- 1 tsp Salt
- 1 cup Unsalted butter, room temperature
- 1 ½ cups Packed light brown sugar
- 2 tsp Vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the cobbler.
- Prepare Baking Dish: Spray a 9”x 6” baking dish with non-stick baking spray to prevent sticking.
- Mix Berries: In a large bowl, add the blackberries, sliced strawberries, and blueberries.
- Add Lemon Juice: Drizzle the berries with ¾ tablespoon of lemon juice for freshness and slight tartness.
- Toss Fruit: Gently toss the berries with lemon juice to combine evenly.
- Add Cornstarch: Sprinkle 2 tablespoons of cornstarch over the berries and toss again to coat. This helps thicken the fruit mixture.
- Marinate Berries: Let the berries marinate for 20 minutes to release their juices and activate the cornstarch.
- Combine Dry Ingredients: In a separate large bowl, whisk together 2 cups flour, 1 teaspoon baking powder, and 1 teaspoon salt. Set aside.
- Mix Dough: Using a stand mixer, beat 1 cup room temperature unsalted butter, 1 ½ cups packed light brown sugar, and 2 teaspoons vanilla extract until well blended and creamy.
- Add Dry Ingredients: Gradually add the flour mixture to the butter mixture, mixing until the dough resembles small crumbs.
- Assemble Cobbler: Pour the marinated berry mixture into the prepared baking dish, spreading it evenly.
- Top with Dough: Drop the crumbly dough mixture evenly over the berries, covering as much surface as possible.
