Instructions

  1. Combine Ingredients: In a heavy-bottomed pot such as a Dutch oven, combine the frozen peaches, water, honey, ground cinnamon, sea salt, and vanilla extract. Heat over medium-low, stirring frequently until the honey and cinnamon are fully incorporated and not sticking to the bottom.
  2. Simmer: Bring the mixture to a gentle simmer, then reduce the heat to low. Let it simmer for 20 to 40 minutes, depending on the desired thickness and consistency of your compote.
  3. Stir and Break Down Peaches: Stir the compote every 8 to 10 minutes to prevent sticking or burning. If necessary, reduce the heat. Use a wooden spoon or spatula to gently mash some of the peaches as they cook to develop a thicker texture.
  4. Cool and Store: Once done, remove the pot from heat and let the compote cool to room temperature. Transfer the compote to a glass jar and store it in the refrigerator. It keeps well for up to 5 days.
