Description

Delight in these refreshing Strawberry Yogurt Popsicles, a perfect blend of creamy yogurt and sweet strawberries swirled together with a hint of lime and honey. These naturally sweetened, homemade popsicles are easy to prepare and make for a healthy, delicious treat during warm days.

Ingredients

Scale

Yogurt Mixture

  • 1 1/2 cups plain yogurt
  • 1 tablespoon honey

Strawberry Puree

  • 1 pound frozen strawberries
  • 2 tablespoons water
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons honey

Instructions

  1. Mix the Yogurt: Stir the plain yogurt with one tablespoon of honey until smooth and free of lumps to create a creamy base for the popsicles.
  2. Prepare the Strawberry Puree: In a high-speed blender or food processor, combine the frozen strawberries, water, lime juice, and two tablespoons of honey, blending until fully smooth and combined.
  3. Layer the Popsicles: Alternately spoon layers of the yogurt mixture and strawberry puree into 10 popsicle molds, tapping the molds gently on the counter 5 to 10 times to create a beautiful swirled effect. Insert the popsicle sticks.
  4. Freeze: Place the filled molds in the freezer and let them freeze solid for at least three hours.
  5. Release from molds: If the popsicles do not come out easily, run the molds briefly under lukewarm water to loosen them before removing.
  6. Serve or Store: Serve immediately or store the popsicles in the freezer for up to 3 months for a convenient frozen treat anytime.

Notes

  • Use full-fat yogurt for creamier popsicles or Greek yogurt for added protein.
  • Adjust honey to taste or substitute with maple syrup for a vegan option.
  • If you don’t have popsicle molds, use small paper cups and wooden sticks as an alternative.
  • Frozen strawberries can be replaced with fresh ones, but freeze them first for better texture.
  • Run molds under lukewarm water briefly to help release popsicles without melting them.
