Description

A refreshing and naturally sweetened Strawberry Agua Fresca made from fresh strawberries, lime juice, and a hint of sugar. This vibrant Mexican-inspired beverage is perfect for warm days, offering a cool, fruity drink that’s easy to prepare and delightfully hydrating.

Strawberry Mixture

  • 1 lb. fresh strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 2 Tbsp. fresh lime juice (from 1 lime)

Liquid & Garnish

  • 4 cups water
  • Ice, for serving
  • Mint sprigs, for garnish


Instructions

  1. Sweeten Strawberries: Add the hulled and halved strawberries along with 1/2 cup granulated sugar into a bowl. Toss well to combine, then let the mixture sit at room temperature for 1 hour, tossing occasionally to help the sugar dissolve and draw out the juices.
  2. Blend Mixture: Transfer the strawberry and sugar mixture into a blender or food processor. Add 2 tablespoons of fresh lime juice. Blend on high speed for 1 to 2 minutes until the mixture is smooth and fully pureed.
  3. Strain Juice: Place a fine mesh strainer over a large pitcher. Pour the blended strawberry mixture into the strainer and use a spoon to stir and press the pulp, allowing the juice to collect in the pitcher. Discard the solids left in the strainer.
  4. Combine with Water: Add 4 cups of cold water to the strained strawberry juice in the pitcher. Stir well and taste for sweetness. Add additional sugar if you prefer a sweeter drink, dissolving it thoroughly.
  5. Chill and Serve: Refrigerate the strawberry agua fresca until it is nicely chilled, about 2 hours. Serve over ice cubes and garnish each glass with a fresh mint sprig for a refreshing touch.

Notes

  • For a more intense strawberry flavor, let the berry-sugar mixture macerate longer, up to 2 hours.
  • If you prefer a pulpier drink, skip the straining step or use a coarser strainer.
  • Adjust sweetness by adding more or less sugar depending on your preference and the natural sweetness of strawberries.
  • To keep it vegan and fresh, use organic sugar if possible.
