Description

Celebrate St. Patrick’s Day with these festive cookie bars, loaded with green M&M’s and semi-sweet chocolate chips. Soft, chewy, and perfectly sweet, these bars are easy to make and perfect for sharing.

Ingredients

Scale

Wet Ingredients

  • ½ cup unsalted sweet cream butter, softened
  • ½ cup light brown sugar, packed
  • ¼ cup sugar
  • 1 large egg
  • ½ teaspoon pure vanilla extract

Dry Ingredients

  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon kosher salt

Add-ins

  • ¾ cup green M&M’s
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350 degrees Fahrenheit and line a 9×9 inch baking dish with parchment paper to prevent sticking and ensure easy removal.
  2. Cream Wet Ingredients: Using a standing mixer, cream together the softened butter, light brown sugar, sugar, egg, and vanilla extract until the mixture is smooth and well combined.
  3. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, and kosher salt until evenly combined.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, whisking continuously until just combined, being careful not to overmix to maintain a tender texture.
  5. Add M&M’s and Chocolate Chips: Gently fold in ¾ cup of green M&M’s and ¾ cup of semi-sweet chocolate chips, distributing them evenly throughout the dough.
  6. Press Dough Into Pan: Transfer the cookie dough to the prepared baking dish and press it down evenly to cover the entire base.
  7. Top with Extra Candies: Scatter a few extra green M&M’s and chocolate chips on top for a decorative touch and added texture.
  8. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is lightly browned and a toothpick inserted near the center comes out mostly clean.
  9. Cool and Cut: Remove from the oven and allow the cookie bars to cool completely in the pan before slicing into 12 bars for serving.

Notes

  • For best texture, do not overbake; remove from oven when bars are just lightly golden.
  • Using parchment paper makes cleanup easier and prevents the bars from sticking.
  • These bars can be stored in an airtight container at room temperature for up to 5 days.
  • Feel free to swap green M&M’s with your favorite candy for different occasions.
