Ingredients
Scale
For the Sushi Rice
- 2 cups sushi rice
- 2.5 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
For the Salmon Topping
- 1 lb fresh salmon fillet, skinless and diced
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha sauce (or to taste)
- 1 teaspoon sesame oil
- 1/2 cup green onions, chopped (plus extra for garnish)
- 1 sheet nori, cut into small strips (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi bake.
- Cook Sushi Rice: Rinse the sushi rice under cold water repeatedly until the water runs clear to remove excess starch, then cook the rice in a rice cooker or pot with 2.5 cups of water until tender and fluffy.
- Season Rice: In a small mixing bowl, combine rice vinegar, sugar, and salt, stirring until dissolved. Fluff the cooked rice and gently mix in the vinegar mixture to evenly season the rice.
- Assemble Rice Layer: Spread the seasoned sushi rice evenly in a baking dish, creating a solid base layer for the salmon topping.
- Prepare Salmon Mixture: In a separate bowl, combine the diced salmon, mayonnaise, Sriracha sauce, sesame oil, and chopped green onions. Mix well to ensure the salmon is evenly coated with the spicy, creamy mixture.
- Top and Bake: Spread the salmon mixture evenly over the rice in the baking dish. Bake in the preheated oven for 25 to 30 minutes, or until the salmon topping is cooked through and the edges are golden brown.
- Garnish and Serve: Remove from the oven and garnish with the sliced nori strips and extra chopped green onions. Serve warm and enjoy.
Notes
- Use fresh, sushi-grade salmon for the best flavor and safety.
- Adjust the amount of Sriracha to your preferred level of spiciness.
- Allow the sushi bake to cool slightly before serving to let it set for easier slicing.
- Optional: Serve with soy sauce or additional wasabi for an authentic sushi touch.
