Seafood Filling

  • 1 tablespoon olive oil
  • 1/2 lb shrimp, peeled, deveined, and chopped
  • 1/2 lb lump crab meat (fresh or canned, drained)

Cheese Mixture

  • 1 1/2 cups ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided

Sauce and Seasoning

  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste


Instructions

  1. Preheat and cook noodles: Preheat your oven to 375°F (190°C). Boil the lasagna noodles according to package directions until al dente. Drain and lay them flat on parchment paper or foil to prevent sticking.
  2. Cook shrimp: Heat olive oil in a skillet over medium heat. Add minced garlic and shrimp, cooking for 2–3 minutes until the shrimp turn pink and are fully cooked. Remove from heat and let cool slightly.
  3. Prepare seafood filling: In a large mixing bowl, combine ricotta cheese, egg, grated Parmesan, 1 cup of shredded mozzarella, cooked shrimp, lump crab meat, chopped parsley, salt, and pepper. Mix until well blended.
  4. Prepare baking dish: Spread one-third of the Alfredo sauce evenly over the bottom of a 9×13-inch baking dish.
  5. Assemble roll-ups: Spread 2 to 3 tablespoons of the seafood cheese filling evenly over each lasagna noodle, then roll each noodle up tightly.
  6. Arrange roll-ups in dish: Place each roll-up seam-side down in the prepared baking dish on top of the Alfredo sauce.
  7. Add sauce and cheese topping: Pour the remaining Alfredo sauce over the roll-ups and sprinkle with the remaining 1 cup of shredded mozzarella cheese.
  8. Bake: Cover the dish tightly with foil and bake for 25 minutes. Then remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown on top.
