Instructions
- Cook onion: In a large skillet over medium heat, add 2 tablespoons of olive oil and the finely diced sweet onions. Cook for 2-3 minutes until the onions are softened and translucent.
- Add garlic: Stir in the minced garlic and sauté for 1 minute until fragrant, being careful not to burn the garlic.
- Add squash and seasonings: Add the cubed summer squash and zucchini to the skillet along with salt, pepper, and 1 tablespoon of butter. Stir to combine all ingredients.
- Cover and cook: Cover the skillet with a lid and cook the vegetables for 5 minutes to allow them to soften and steam.
- Uncover and finish cooking: Remove the lid and stir the mixture. Continue cooking uncovered for an additional 5-7 minutes or until the squash is tender and cooked to your liking. For a caramelized effect, let the vegetables sit undisturbed for 1-2 minutes before stirring.
