Ingredients
Scale
Sweet Potatoes
- 4 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Sausage and Sauce
- 1 pound sausage links (pork, chicken, or turkey)
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 teaspoon red pepper flakes (optional, for spice)
- 2 tablespoons fresh parsley, chopped (optional for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
- Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, salt, and black pepper until they are evenly coated for roasting.
- Roast Sweet Potatoes: Spread the sweet potatoes on a baking sheet in a single layer and bake for 20-25 minutes, turning halfway through, until tender and lightly browned.
- Cook Sausages: While sweet potatoes roast, heat a large skillet over medium heat and cook sausage links for 10-12 minutes, turning occasionally, until browned and cooked through; set aside, reserving drippings.
- Make Sauce Base: Reduce skillet heat to low, add butter and melt it. Add minced garlic and stir constantly for 1 minute until fragrant but not browned.
- Prepare Honey Garlic Sauce: Stir in honey, soy sauce, and red pepper flakes if using. Increase heat slightly and cook for 2-3 minutes until the sauce thickens slightly.
- Combine Sausages and Sauce: Return sausages to skillet, roll them in sauce to coat evenly, and simmer for another 2 minutes to meld flavors.
- Serve: Plate the roasted sweet potatoes and arrange the sauced sausages on top. Drizzle any remaining honey garlic sauce over the dish and garnish with fresh parsley if desired.
Notes
- You can use pork, chicken, or turkey sausages based on preference.
- Red pepper flakes are optional and can be omitted or adjusted to control spice level.
- Fresh parsley adds a nice color contrast and fresh flavor as garnish but is optional.
- Make sure garlic does not brown to avoid bitterness in the sauce.
- Turning sweet potatoes halfway through roasting ensures even browning.
