Ingredients
Scale
Proteins & Dairy
- 4 salmon fillets (skin removed)
- 5 ounces (1 box) Boursin cheese
Pasta
- 14.5 ounces protein pasta (like Rotini or Penne)
Vegetables & Aromatics
- 1 pint cherry tomatoes
- 3 cloves garlic (minced)
- 3 cups baby spinach
Spices & Oils
- 1 tablespoon olive oil
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the salmon and cheese mixture.
- Cook Pasta: Bring a large pot of water to a boil over high heat, then cook the protein pasta according to the package directions until al dente. Drain and set aside.
- Prepare Baking Vessel: Place the Boursin cheese in the center of a large pot or oven-safe baking dish. Arrange the salmon fillets around the cheese. Add the cherry tomatoes and minced garlic into the pot, then drizzle everything with olive oil. Sprinkle the onion powder, paprika, salt, and black pepper evenly over all ingredients.
- Bake Salmon and Vegetables: Bake the assembled dish in the oven for 20 minutes, or until the salmon is fully cooked. Once done, remove from the oven and stir in the baby spinach, allowing it to wilt. Break the salmon into bite-sized pieces and mix thoroughly to combine with the creamy cheese and vegetables.
- Combine and Serve: Add the cooked pasta into the pot with the baked salmon mixture. Stir well to coat the pasta evenly with sauce and ingredients. Serve immediately while hot for the best flavor and texture.
Notes
- You can substitute other types of cheese if you prefer a different flavor, but Boursin provides a rich, garlicky creaminess unique to this recipe.
- If you want to reduce sodium, adjust the amount of salt accordingly or use a low-sodium cheese alternative.
- To ensure even cooking, try to use salmon fillets of similar thickness.
- Adding fresh herbs like dill or parsley as garnish can enhance the freshness of the dish.
- Leftovers can be stored in an airtight container in the refrigerator for up to two days; reheat gently to prevent drying out.
