Ingredients
Scale
French Toast:
- 4 large eggs
- 1 cup milk
- 1/2 cup canned pumpkin puree
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon salt
- 8 slices of thick bread (like brioche or Texas toast)
- butter or oil for cooking
- maple syrup for serving
Instructions
- In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
- Heat a large nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
- Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side.
- Let excess drip off, then place the soaked bread on the hot skillet.
- Cook for 2 to 3 minutes per side, or until golden brown and cooked through.
- Repeat with remaining slices, greasing the pan as needed.
- Serve warm with maple syrup and optional toppings like whipped cream, chopped pecans, or a dusting of powdered sugar.
Notes
- Day-old bread works best as it soaks up the custard without becoming too soggy.
- You can substitute pumpkin pie spice for the individual spices if preferred.
