Description

Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups all-purpose flour

Chocolate Coating:

  • 12 ounces semi-sweet or dark chocolate chips
  • 1/2 teaspoon peppermint extract (for coating)

Instructions

  1. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  2. Mix in the egg, vanilla extract, and peppermint extract.

  3. In a separate bowl, whisk together the salt, cocoa powder, and flour.
  4. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.

  5. Divide the dough in half, flatten into discs, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the dough on a floured surface to about 1/8-inch thickness and cut into 1.5 to 2-inch rounds.
  8. Place on baking sheets and bake for 10–12 minutes.
  9. Let cookies cool completely on wire racks.
  10. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  11. Stir in the 1/2 teaspoon peppermint extract.

  12. Dip each cooled cookie into the melted chocolate, coating completely, and place on parchment paper to set.
  13. Let chocolate set fully at room temperature or refrigerate for faster results.
