Vegetables
- 700g / 1.4 lb baby potatoes, halved
- 3 carrots, peeled and cut into 2″/5cm pieces
- 2 red onions, each cut into 8 wedges
- 2 garlic cloves, minced
Seasoning & Oil
- 2 tbsp olive oil
- 2 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
Sausages
- 8 – 10 sausages (500-700g / 1-1.4 lb)
- Oil spray (optional)
Gravy
- 2 tbsp / 30g unsalted melted butter
- 2 1/2 tbsp plain / all-purpose flour
- 2 cups / 500 ml beef broth (or chicken broth)
Garnish
- Fresh thyme (optional)
Instructions
- Preheat the oven: Preheat your oven to 200°C (390°F) for standard ovens or 180°C (350°F) if using a fan/convection oven to ensure even cooking.
- Prepare vegetables: In a large mixing bowl, combine the baby potatoes, carrots, red onions, and minced garlic. Drizzle with olive oil and sprinkle dried thyme, dried oregano, salt, and pepper. Toss everything well to evenly coat the vegetables with the seasonings.
- Add sausages to the mix: Place the sausages into the bowl with the seasoned vegetables and toss briefly to coat the sausages lightly with oil and herbs.
- Arrange in roasting pan: Transfer the vegetable and sausage mixture into a roasting pan. Make sure the pan is large enough so the vegetables form a 2-layer deep bed. Arrange sausages on top of the vegetables for even roasting and browning.
- Roast the sausages and vegetables: Place the roasting pan in the preheated oven and bake for 35-40 minutes, or until the sausages are cooked through and the vegetables are tender and caramelized. Optionally, spray sausages lightly with oil halfway through to improve browning.
- Make the gravy: While the sausages and vegetables roast, prepare the gravy. Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes until it turns golden and bubbly to form a roux. Gradually whisk in the beef broth, constantly stirring to prevent lumps. Continue cooking for 5 minutes until the gravy thickens. Season with salt and pepper to taste.
- Serve and garnish: Once cooked, transfer the sausages and vegetables to serving plates. Pour the homemade gravy over the top and garnish with fresh thyme if desired. Serve immediately for a delicious, comforting meal.
