Ingredients
Scale
Meat and Dairy
- 1 lb sirloin or flank steak, thinly sliced
- 4 oz cream cheese
- 1 ½ cups shredded provolone or mozzarella cheese
Vegetables
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- Fresh parsley, chopped (optional)
Other
- 2 tablespoons olive oil
- 4 cups beef broth
- 12 oz short pasta (penne or rigatoni)
- Salt and pepper, to taste
Instructions
- Brown the Beef: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the thinly sliced beef and sear until browned on all sides. Once cooked, remove the beef from the pot and set aside.
- Sauté Vegetables: Add more olive oil if needed to the same pot. Add diced onions and bell peppers, cooking until they become soft and slightly caramelized. Stir in minced garlic and cook for an additional 1 minute to release its aroma.
- Cook Pasta in Broth: Pour in the beef broth and bring the mixture to a boil. Add the short pasta (penne or rigatoni), then reduce the heat to a simmer and cover the pot. Cook until the pasta is tender, stirring occasionally to prevent sticking, about 10-12 minutes.
- Add Cream Cheese and Beef: Stir in the cream cheese until it melts fully into the sauce, creating a creamy texture. Return the browned beef slices to the pot and mix thoroughly.
- Incorporate Shredded Cheese and Season: Add the shredded provolone or mozzarella cheese and stir until melted and the sauce becomes smooth and creamy. Season with salt and pepper to taste. Garnish with freshly chopped parsley if desired and serve hot.
Notes
- Use sirloin or flank steak for tender, flavorful beef slices.
- If short on time, pre-slice the steak and prep vegetables ahead.
- For a spicier version, add red pepper flakes when sautéing vegetables.
- Substitute beef broth with vegetable broth for a lighter flavor.
- Leftovers reheat well in a skillet over low heat with a splash of broth or water.
