  • 1 English muffin (cut in half)
  • 2 eggs
  • 2-4 slices of ham (black forest or any preferred type)
  • 1/3 cup finely shredded Mexican cheese
  • 1 tsp finely chopped chives
  • Salt and pepper to taste
  • 1 Tbsp olive oil or butter (for sautéing)


Instructions

  1. Preheat the Pan: Heat a large non-stick pan over medium heat and drizzle it with 1 tablespoon of olive oil or butter to prepare for cooking the sandwich components.
  2. Toast Muffin & Cook Eggs: Place the English muffin halves cut-side down on one half of the pan. On the other half, crack 2 eggs side by side and gently break the yolks with a spatula to cook evenly.
  3. Season & Add Cheese: When the eggs are mostly set, sprinkle salt, pepper, and 1 teaspoon of freshly chopped chives over the tops. Then add half of the shredded cheese over the eggs. Next, put the toasted English muffin halves, cut-side down, over the eggs and press lightly with the spatula to bind.
  4. Assemble & Finish: Flip the sandwich carefully so the egg side is up. Layer 2-4 slices of ham over half the sandwich, sprinkle with the remaining cheese, then fold the sandwich together. Remove from heat and serve immediately for a warm, melty breakfast treat.
