Dry Ingredients:
- 1 ½ cups all-purpose flour
- 1/2 cup whole wheat flour

- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup chopped pitted dates
- 1 tablespoon orange zest
- 3/4 cup freshly squeezed orange juice
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a muffin tin.
- Prepare dry ingredients: In a large bowl, whisk together flours, baking soda, baking powder, salt, and cinnamon. Add sugars and mix.
- Add dates and zest: Toss in dates and orange zest until coated.
- Mix wet ingredients: In another bowl, whisk orange juice, melted butter, eggs, and vanilla.
- Combine: Gently mix wet ingredients into dry until just combined.
- Bake: Divide batter into muffin cups and bake for 18–22 minutes.
- Cool and serve: Let cool in the pan before transferring to a rack.
Notes
- You can substitute half the butter with applesauce for a lighter version.
- For added crunch, sprinkle chopped walnuts or pecans on top before baking.
