Description

  • 2 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a muffin tin.
  2. Prepare dry ingredients: In a large bowl, whisk together flours, baking soda, baking powder, salt, and cinnamon. Add sugars and mix.
  3. Add dates and zest: Toss in dates and orange zest until coated.
  4. Mix wet ingredients: In another bowl, whisk orange juice, melted butter, eggs, and vanilla.
  5. Combine: Gently mix wet ingredients into dry until just combined.
  6. Bake: Divide batter into muffin cups and bake for 18–22 minutes.
