Instructions
- Crush the Cookies: Crush the Nutter Butter cookies into a fine crumb using a food processor or blender. If using a blender, blend the cookies in small batches to avoid clogging.
- Mix the Filling: In a small bowl, beat the softened cream cheese, powdered sugar, and creamy peanut butter until smooth and well combined. Add this mixture to the cookie crumbs and stir thoroughly until all ingredients are evenly incorporated.
- Form the Truffles: Roll the dough into bite-sized balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper. Freeze the cookie balls for at least 15 minutes to help them set before dipping.
- Melt the Chocolate: Melt the chocolate melting wafers following the package instructions until smooth. Using a fork, dip each truffle into the melted chocolate, allowing excess chocolate to drip off. Place the coated truffles back onto the parchment-lined baking sheet and immediately top with sprinkles or a pinch of sea salt if desired.
- Set the Truffles: Allow the chocolate to set by leaving the truffles at room temperature for about 30 minutes or refrigerate them for 10 minutes until the coating hardens and the truffles are firm.
