Description

Nobu Crispy Rice with Spicy Tuna is a delightful Japanese-inspired appetizer featuring crispy fried sushi rice patties topped with a flavorful spicy tuna mixture. This dish combines textures of crunchy rice and creamy, spicy seafood, perfect for impressing guests or enjoying a refined snack at home.

Ingredients

Scale

For the Crispy Rice

  • 2 cups sushi rice, cooked and cooled
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • Vegetable oil, for frying

For the Spicy Tuna Topping

  • 8 ounces fresh sushi-grade tuna, finely chopped
  • 1 tablespoon mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon green onion, finely chopped

For Garnish and Serving

  • Soy sauce, for dipping
  • Toasted sesame seeds (optional)
  • Finely sliced jalapeño (optional)

Instructions

  1. Prepare the Sushi Rice: Cook the sushi rice according to package instructions. Once cooked, allow it to cool slightly. Mix the rice vinegar, sugar, and salt together, then gently fold this mixture into the rice. Allow the rice to cool completely to ensure it sets well for shaping.
  2. Shape and Chill the Rice Patties: Shape the cooled rice into small rectangular or oval patties, packing them tightly so they hold their shape. Place the patties on a tray and refrigerate for at least 30 minutes to firm them up for frying.
  3. Make the Spicy Tuna Mixture: In a bowl, combine the finely chopped tuna, mayonnaise, sriracha sauce, soy sauce, sesame oil, and chopped green onion. Mix thoroughly until well combined. Taste and adjust seasoning if necessary, then refrigerate until ready to assemble.
  4. Fry the Rice Patties: Heat a generous amount of vegetable oil in a non-stick pan over medium-high heat. When the oil is hot, carefully add the rice patties. Fry each side for about 3-5 minutes or until golden brown and crispy. Remove the patties and place them on a paper towel-lined plate to drain excess oil.
  5. Assemble the Crispy Rice with Spicy Tuna: Spoon a generous amount of the spicy tuna mixture onto each crispy rice patty. Garnish with toasted sesame seeds and a slice of jalapeño if desired for an extra kick.
  6. Serve: Serve immediately with soy sauce on the side for dipping to enjoy the crispy texture and spicy flavor combination at its best.

Notes

  • Use sushi-grade tuna for the freshest and safest raw fish experience.
  • Make sure to refrigerate the rice patties before frying to help them hold their shape better.
  • You can adjust the spice level of the tuna mixture by varying the amount of sriracha.
  • For a gluten-free version, use tamari or gluten-free soy sauce.
  • Serve immediately after assembling to preserve the crispiness of the rice.
