Ingredients
Scale
Meatloaf Mixture
- 1 lb ground beef (85% lean)
- 1/2 cup finely chopped onion
- 1/2 cup plain breadcrumbs
- 1/3 cup milk
- 1 large egg
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup for topping
Mashed Potato Frosting
- 3 cups peeled and chopped potatoes
- 2 tablespoons butter
- 1/4 cup milk (for potatoes)
- Salt and pepper to taste
- Optional chopped chives or parsley for garnish
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin to prevent sticking.
- Mix Meatloaf Ingredients: In a large bowl, combine ground beef, finely chopped onion, breadcrumbs, 1/3 cup milk, egg, 2 tablespoons ketchup, Worcestershire sauce, garlic powder, salt, and black pepper. Mix gently until just combined to avoid overworking the meat.
- Shape and Top Meatloaves: Divide the meat mixture evenly among the prepared muffin cups, pressing down slightly to form mini loaves. Top each with a small spoonful of ketchup for added flavor and moisture.
- Bake Meatloaf Muffins: Bake in the preheated oven for 20 to 25 minutes, or until meatloaves are completely cooked through and reach an internal temperature of 160°F (71°C).
- Cook Potatoes for Frosting: While the mini meatloaves bake, place peeled and chopped potatoes in a pot, cover with cold water, and bring to a boil. Cook until tender, about 15 to 20 minutes.
- Mash Potatoes: Drain the potatoes thoroughly, then mash them with butter, 1/4 cup milk, and salt and pepper to taste until smooth and creamy.
- Cool and Frost: Once the meatloaf muffins are done, let them cool for 5 minutes. Transfer the mashed potatoes to a piping bag or a plastic bag with the corner snipped off, and pipe the mashed potatoes onto each meatloaf muffin like frosting.
- Garnish and Serve: Garnish the mashed potato frosting with optional chopped chives or parsley for a fresh touch. Serve warm and enjoy!
Notes
- You can substitute ground turkey or chicken instead of beef for a lighter version.
- Add shredded cheese to the mashed potatoes for extra flavor and richness.
- These meatloaf muffins can be made ahead of time and reheated in the oven before serving.
- Ensure not to overmix the meatloaf ingredients to keep the texture tender.
- Use fresh herbs such as parsley or chives to enhance presentation and flavor.
