Ingredients
Scale
Crust
- 24 vanilla wafer cookies, crushed
- 4 tbsp unsalted butter, melted
Filling
- 1 (3.4 oz) package instant banana pudding mix
- 1½ cups cold milk
- 1 large banana, thinly sliced
- 1 cup whipped topping
Optional Garnish
- Extra banana slices
- Mini wafers
- Crushed cookies or whipped cream
Instructions
- Make the Crust: Combine the crushed vanilla wafer cookies with the melted unsalted butter until the mixture is evenly coated. Press this mixture firmly into the cups of a mini muffin tin to form individual pie crusts. Place the pan in the freezer and chill for 10 minutes to set the crusts firmly.
- Prepare the Pudding: In a mixing bowl, whisk together the instant banana pudding mix and cold milk for about 2 minutes until smooth and well blended. Let the mixture stand for 5 minutes so it can thicken properly.
- Add Bananas & Fill: Remove the crusts from the freezer. Arrange thin slices of banana over each chilled crust, covering evenly. Spoon or pipe the set banana pudding over the banana slices, filling each crust cavity. Smooth the tops gently for a clean finish.
- Top & Garnish: Spread or pipe the whipped topping on top of the pudding layer. Garnish each mini pie with extra banana slices, mini wafers, crushed cookies, or a dollop of whipped cream as desired. Serve immediately or chill until ready to enjoy.
Notes
- For best results, use cold milk straight from the refrigerator when preparing the pudding mix to ensure proper setting.
- Chilling the crust before filling helps maintain a crisp texture and prevents sogginess.
- You can prepare the crusts and pudding ahead of time and assemble just before serving.
- For a richer experience, use homemade whipped cream instead of store-bought whipped topping.
- If desired, substitute gluten-free vanilla wafers to make this recipe gluten-free.
