Ready in just 20 minutes, it’s a fresh, light, and delicious seafood meal that’s sure to impress.

Ingredients

Scale

Shrimp

  • 1 pound large shrimp, peeled and deveined

Vegetables & Aromatics

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced

Flavorings

  • 3 tablespoons Meyer lemon juice
  • 1 tablespoon Meyer lemon zest
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Heat the skillet: Place a large skillet over medium-high heat and add 1 tablespoon of olive oil. Allow the oil to heat until it shimmers, indicating it’s hot enough for cooking.
  2. Season the shrimp: In a bowl, season the peeled and deveined shrimp with salt and black pepper evenly. Set aside while preparing the remaining ingredients.
  3. Sauté the asparagus: Add the asparagus pieces to the hot skillet and cook for about 3 to 4 minutes until they turn bright green and are just tender but still crisp. Remove the asparagus from the skillet and set aside.
  4. Sauté the garlic and shrimp: Add the remaining tablespoon of olive oil to the skillet. Add minced garlic and sauté for about 30 seconds until fragrant. Then place the shrimp in a single layer in the skillet.
  5. Cook the shrimp: Cook the shrimp for 2 to 3 minutes on each side until they turn opaque and develop a slight golden color. Return the cooked asparagus to the skillet.
  6. Add lemon and combine: Pour in the Meyer lemon juice and sprinkle the lemon zest over the shrimp and asparagus. Toss everything together gently to coat evenly and remove the skillet from heat.
  7. Garnish and serve: Sprinkle the chopped fresh parsley over the dish for a pop of color and fresh flavor. Serve the shrimp and asparagus hot for the best taste experience.

Notes

  • Use large shrimp for the best texture and quick cooking.
  • Make sure the skillet and oil are hot before adding ingredients to achieve good searing.
  • Do not overcook the asparagus to maintain its crisp texture.
  • Fresh Meyer lemons add a sweeter, less acidic lemon flavor compared to regular lemons.
  • Optional parsley adds freshness but can be omitted if unavailable.
