Ingredients
Scale
Shrimp
- 1 pound large shrimp, peeled and deveined
Vegetables & Aromatics
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
Flavorings
- 3 tablespoons Meyer lemon juice
- 1 tablespoon Meyer lemon zest
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Heat the skillet: Place a large skillet over medium-high heat and add 1 tablespoon of olive oil. Allow the oil to heat until it shimmers, indicating it’s hot enough for cooking.
- Season the shrimp: In a bowl, season the peeled and deveined shrimp with salt and black pepper evenly. Set aside while preparing the remaining ingredients.
- Sauté the asparagus: Add the asparagus pieces to the hot skillet and cook for about 3 to 4 minutes until they turn bright green and are just tender but still crisp. Remove the asparagus from the skillet and set aside.
- Sauté the garlic and shrimp: Add the remaining tablespoon of olive oil to the skillet. Add minced garlic and sauté for about 30 seconds until fragrant. Then place the shrimp in a single layer in the skillet.
- Cook the shrimp: Cook the shrimp for 2 to 3 minutes on each side until they turn opaque and develop a slight golden color. Return the cooked asparagus to the skillet.
- Add lemon and combine: Pour in the Meyer lemon juice and sprinkle the lemon zest over the shrimp and asparagus. Toss everything together gently to coat evenly and remove the skillet from heat.
- Garnish and serve: Sprinkle the chopped fresh parsley over the dish for a pop of color and fresh flavor. Serve the shrimp and asparagus hot for the best taste experience.
Notes
- Use large shrimp for the best texture and quick cooking.
- Make sure the skillet and oil are hot before adding ingredients to achieve good searing.
- Do not overcook the asparagus to maintain its crisp texture.
- Fresh Meyer lemons add a sweeter, less acidic lemon flavor compared to regular lemons.
- Optional parsley adds freshness but can be omitted if unavailable.
