Ingredients
Scale
Chicken and Marinade
- 1 lb chicken breasts (about 2 large breasts)
- 1/2 cup Greek dressing
Grains and Legumes
- 2 bags Success Boil-in-Bag White Rice, or 2 heaping cups cooked white rice
- 1 (15.5 oz) can chickpeas, drained and rinsed
Vegetables and Toppings
- 1 large cucumber, chopped
- 1 cup quartered grape tomatoes
- 1/4 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- 1/4 cup hummus
Instructions
- Marinate the chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Use your hands or a spoon to coat both sides thoroughly. Cover and refrigerate for at least 1 hour to allow the flavors to infuse the meat.
- Prepare the rice: Cook the Success Boil-in-Bag White Rice according to the package instructions. Alternatively, cook about 2 heaping cups of white rice until tender and fluffy.
- Cook the chicken: Preheat your air fryer to 400°F. Place the marinated chicken breasts in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F and is golden brown. If using an oven, preheat to 400°F and bake the chicken on a baking tray for about 20 minutes until cooked through.
- Assemble the bowls: Divide the cooked rice evenly among four bowls. Top each bowl with a chicken breast, chickpeas, chopped cucumber, quartered grape tomatoes, sliced red onion, a dollop of hummus, tzatziki sauce, and sprinkle with crumbled feta cheese. Add extra Greek dressing if desired for an extra flavor boost.
- Serve and enjoy: Serve the Mediterranean chicken and rice bowls immediately while warm and enjoy this fresh, healthy, and satisfying meal.
Notes
- Marinate the chicken longer, up to 8 hours, for even more flavor.
- For a gluten-free meal, ensure the Greek dressing and hummus are certified gluten-free.
- Leftovers can be refrigerated for up to 3 days and reheated gently before serving.
- Feel free to add olives or fresh parsley for extra Mediterranean flair.
- Can be made dairy-free by omitting feta and tzatziki or using dairy-free alternatives.
