For the Meatballs:
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning

- 1/4 teaspoon black pepper
For Assembly:
- 1 cup marinara sauce
- 1 can refrigerated biscuit dough (8-count)
- 1 cup shredded mozzarella cheese
- 1 tablespoon chopped fresh parsley (optional)
- Nonstick cooking spray
Instructions
- Preheat the Oven: Preheat the oven to 375°F and lightly grease a mini muffin tin with nonstick cooking spray.
- Prepare the Meatballs: In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into 24 small meatballs. Cook in a skillet until browned and cooked through.
- Assemble the Bites: Cut biscuit dough into thirds and press into muffin tin cups. Add marinara sauce, a meatball, more sauce, and mozzarella cheese to each cup.
- Bake: Bake for 12–15 minutes until golden and bubbly. Let cool slightly before serving. Garnish with parsley if desired.
