Description

These Mardi Gras Beef Sausage Sandwiches are a flavorful Southern-inspired main course perfect for a party or casual meal. Featuring spiced beef sausage sautéed with onions and bell peppers, all piled onto toasted hoagie rolls with crisp lettuce, fresh tomatoes, and a tangy Creole mustard mayo spread, these sandwiches deliver a satisfying blend of savory and zesty flavors.

Ingredients

Scale

Sausage and Vegetables

  • 1 tablespoon olive oil
  • 1 large yellow onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 pound beef sausage links or smoked sausage, sliced into 1/2-inch rounds
  • 1 teaspoon Creole seasoning

Sandwich Assembly

  • 4 hoagie rolls or sandwich buns
  • 2 tablespoons mayonnaise
  • 2 teaspoons Creole mustard or Dijon mustard
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced
  • Hot sauce (optional)

Instructions

  1. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers and sauté until softened and fragrant, about 6–8 minutes, stirring occasionally to prevent burning.
  2. Cook Sausage: Add the sliced beef sausage to the skillet with the vegetables. Cook until browned and heated through, about 5–7 minutes, stirring occasionally to ensure even cooking.
  3. Add Seasoning: Sprinkle the Creole seasoning over the sausage and vegetable mixture and stir well to coat everything evenly with the spices.
  4. Prepare Rolls: While the sausage mixture cooks, split the hoagie rolls and lightly toast them until just golden and crisp to enhance texture and flavor.
  5. Assemble Sandwiches: Spread mayonnaise and Creole or Dijon mustard on the toasted rolls. Layer on shredded lettuce, tomato slices, and then pile on the hot sausage and pepper mixture.
  6. Add Optional Heat: If desired, add a few dashes of hot sauce on top to add an extra spicy kick to your sandwiches.
  7. Serve: Serve the sandwiches immediately while hot for best taste and texture.

Notes

  • You can substitute chicken or pork sausage if preferred or for a different flavor profile.
  • For extra heat, add sliced jalapeños or pepper jack cheese to the sandwich layers.
  • To make this recipe dairy-free, simply omit any cheese additions.
  • Use fresh vegetables and quality sausage for the best flavor.
