Ingredients
Scale
Sausage and Vegetables
- 1 tablespoon olive oil
- 1 large yellow onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 pound beef sausage links or smoked sausage, sliced into 1/2-inch rounds
- 1 teaspoon Creole seasoning
Sandwich Assembly
- 4 hoagie rolls or sandwich buns
- 2 tablespoons mayonnaise
- 2 teaspoons Creole mustard or Dijon mustard
- 1 cup shredded lettuce
- 1 medium tomato, sliced
- Hot sauce (optional)
Instructions
- Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers and sauté until softened and fragrant, about 6–8 minutes, stirring occasionally to prevent burning.
- Cook Sausage: Add the sliced beef sausage to the skillet with the vegetables. Cook until browned and heated through, about 5–7 minutes, stirring occasionally to ensure even cooking.
- Add Seasoning: Sprinkle the Creole seasoning over the sausage and vegetable mixture and stir well to coat everything evenly with the spices.
- Prepare Rolls: While the sausage mixture cooks, split the hoagie rolls and lightly toast them until just golden and crisp to enhance texture and flavor.
- Assemble Sandwiches: Spread mayonnaise and Creole or Dijon mustard on the toasted rolls. Layer on shredded lettuce, tomato slices, and then pile on the hot sausage and pepper mixture.
- Add Optional Heat: If desired, add a few dashes of hot sauce on top to add an extra spicy kick to your sandwiches.
- Serve: Serve the sandwiches immediately while hot for best taste and texture.
Notes
- You can substitute chicken or pork sausage if preferred or for a different flavor profile.
- For extra heat, add sliced jalapeños or pepper jack cheese to the sandwich layers.
- To make this recipe dairy-free, simply omit any cheese additions.
- Use fresh vegetables and quality sausage for the best flavor.
