- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken or vegetable broth
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Chopped fresh parsley for garnish

- Heat the olive oil: In a large pot over medium heat, sauté the onion until softened. Add garlic and cook for 1 minute.
- Add orzo and liquids: Stir in orzo, broth, crushed tomatoes, oregano, cinnamon, salt, and pepper. Bring to a boil.
- Simmer: Reduce heat and simmer uncovered for 10–12 minutes until orzo is tender and the stew thickens.
- Finish: Let sit for 5 minutes off heat to thicken further. Stir in Parmesan if using. Garnish with parsley and serve.
Notes
- For a vegan version, use vegetable broth and omit Parmesan. Add diced vegetables for extra texture and nutrition.
- Leftovers can thicken—add some water or broth when reheating.
