  • 1 cup butter, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup vanilla yogurt, drained for a couple of hours in the fridge
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 3/4 cup Peanut Butter M&M’S, roughly chopped

Peanut Butter Frosting

  • 1 cup butter, room temperature
  • 2 cups creamy peanut butter
  • 5 cups powdered sugar
  • 1/4 cup heavy cream (optional, see notes)


Instructions

  1. Prepare the Oven and Pans: Heat the oven to 350°F (175°C). Grease and line two 9-inch round baking pans with parchment paper. Set aside.
  2. Cream Butter and Sugar: In a mixing bowl, add the butter and sugar. Using a paddle attachment, beat on low speed until light and creamy, about 3 minutes.
  3. Add Vanilla and Eggs: Blend in vanilla extract. Add eggs one at a time, beating well after each addition to create a smooth batter.
  4. Add Yogurt and Dry Ingredients: Beat in the drained vanilla yogurt. Gradually add flour, baking powder, and salt in batches, mixing just until combined to avoid over-mixing.
  5. Fold in M&M’S: Using a spatula, gently fold in roughly chopped Peanut Butter M&M’S until evenly distributed.
  6. Bake the Cakes: Divide batter evenly between prepared pans. Bake 22–25 minutes until a toothpick inserted in center comes out clean.
  7. Cool the Cakes: Remove cakes from oven and cool completely in pans on wire rack.
  8. Prepare Frosting: Beat together butter and creamy peanut butter until smooth using paddle attachment.
  9. Add Powdered Sugar: Gradually add powdered sugar 1/2 cup at a time, beating gently after each until the frosting is creamy and thick.
  10. Whip Frosting (Optional): If using a cake ring, add 1/4 cup heavy cream and whip frosting on low, gradually increasing speed for 5 minutes to lighten it.
  11. Assemble First Layer: Place one cake layer on serving platter, fit cake ring if available, and spread half the frosting evenly.
  12. Add Second Layer: Place second cake layer on top, press gently, tighten ring if used, and spread remaining frosting on top.
  13. Decorate: Finish cake with additional Peanut Butter M&M’S, or a mix of Peanut M&M’S for color and flavor.
  14. Chill Cake: Refrigerate in cake ring for 2–3 hours to set frosting before removing ring and serving.

Notes

  • To drain yogurt, place plain vanilla yogurt in a fine mesh strainer or cheesecloth over a bowl and refrigerate for at least 2 hours to remove excess moisture, ensuring the cake batter is not too wet.
  • Adding heavy cream to frosting and whipping it creates a lighter, fluffier texture but is optional.
  • Use room temperature ingredients for better mixing and smoother batter and frosting.
  • Refrigerate assembled cake to allow frosting to set properly for clean slicing.
