White Chocolate Strawberry Truffles:
- 12 oz white chocolate chips
- 1/4 cup freeze-dried strawberries (crushed into powder)
- 1/4 cup heavy cream
- 1/2 tsp vanilla extract
- 1 tbsp unsalted butter
- pinch of salt
- extra crushed freeze-dried strawberries or powdered sugar for coating
Instructions
- Crush the Strawberries: Finely crush the freeze-dried strawberries into a powder using a food processor or by sealing them in a bag and crushing with a rolling pin.
- Prepare the Truffle Mixture: Warm the heavy cream and butter in a saucepan until simmering. Remove from heat, add white chocolate chips, vanilla extract, salt, and crushed strawberry powder. Stir until smooth.
- Chill and Shape: Let the mixture cool, then refrigerate for at least 2 hours. Scoop out portions and roll into balls.
- Coat the Truffles: Roll each truffle in additional crushed strawberries or powdered sugar for coating.
- Storage: Store the truffles in the refrigerator until ready to serve.
Notes
- If the mixture is too soft to roll, freeze it for 15–20 minutes before shaping.
- For a sweeter coating, use powdered sugar instead of extra strawberries.
- Truffles can also be dipped in melted white chocolate for a decadent finish.
