Description

White Chocolate Strawberry Truffles:

  • 12 oz white chocolate chips
  • 1/4 cup freeze-dried strawberries (crushed into powder)
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla extract
  • 1 tbsp unsalted butter
  • pinch of salt
  • extra crushed freeze-dried strawberries or powdered sugar for coating


Instructions

  1. Crush the Strawberries: Finely crush the freeze-dried strawberries into a powder using a food processor or by sealing them in a bag and crushing with a rolling pin.
  2. Prepare the Truffle Mixture: Warm the heavy cream and butter in a saucepan until simmering. Remove from heat, add white chocolate chips, vanilla extract, salt, and crushed strawberry powder. Stir until smooth.
  3. Chill and Shape: Let the mixture cool, then refrigerate for at least 2 hours. Scoop out portions and roll into balls.
  4. Coat the Truffles: Roll each truffle in additional crushed strawberries or powdered sugar for coating.
  5. Storage: Store the truffles in the refrigerator until ready to serve.

Notes

  • If the mixture is too soft to roll, freeze it for 15–20 minutes before shaping.
  • For a sweeter coating, use powdered sugar instead of extra strawberries.
  • Truffles can also be dipped in melted white chocolate for a decadent finish.
