Ingredients
Scale
Meat
- 4 boneless pork chops
- Pepper (to taste)
- Flour (for dredging)
Sauce & Cooking
- 2 tablespoons butter (divided)
- 1 tablespoon olive oil
- 1/2 cup low-sodium chicken broth or stock
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon honey
- 4 cloves garlic (minced)
- 1/2 teaspoon cornstarch
- 1 teaspoon cold water (for cornstarch slurry)
Instructions
- Prepare the pork chops: Sprinkle the pork chops evenly with pepper, then dredge each chop in flour, coating all sides. This helps with browning and thickening the sauce later.
- Sear the pork chops: Heat 1 tablespoon butter and the olive oil in a skillet over medium-high heat. Once hot, add the pork chops and sear for 3-5 minutes per side until golden brown. Thin chops need about 3 minutes per side, thicker up to 1 inch require 5 minutes. Transfer seared chops to a plate.
- Create the sauce base: Remove the skillet from heat and add the chicken broth, soy sauce, honey, minced garlic, and remaining 1 tablespoon butter. Return skillet to the stove over medium heat and cook for about one minute to combine the flavors.
- Thicken the sauce: In a small bowl, mix the cornstarch with 1 teaspoon cold water to form a slurry. Pour this into the skillet while stirring the sauce to activate thickening.
- Finish cooking: Return the pork chops and any accumulated juices on the plate back into the skillet. Simmer on reduced heat for 3-5 minutes until the sauce reduces slightly and pork chops are fully cooked through. Avoid boiling vigorously to prevent burning. Serve hot immediately.
Notes
- Use boneless pork chops about 1 inch thick for best results.
- Adjust honey quantity for a sweeter or milder sauce.
- Low-sodium soy sauce keeps saltiness balanced; regular soy sauce can be used but reduce added salt.
- Use a heavy skillet like cast iron for even searing.
- Ensure pork chops reach an internal temperature of 145°F for safe consumption.
