Description

This Honey Lime Chicken & Avocado Rice Stack is a delicious and vibrant dish that layers marinated chicken, avocado mixture, and rice for a visually appealing meal. The flavors of honey, lime, and spices complement each other perfectly.

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Rice & Avocado:

  • 2 cups cooked white or jasmine rice
  • 1 large avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon lime juice (for avocado)
  • Salt and pepper to taste

Optional toppings: extra cilantro, lime wedges, sour cream, or hot sauce


Instructions

  1. Marinate the Chicken: In a bowl, whisk olive oil, honey, lime juice, lime zest, garlic, chili powder, cumin, salt, and pepper. Add chicken, coat, and marinate for 20 minutes.
  2. Prepare Rice & Avocado: Mix avocado, red onion, cilantro, lime juice, salt, and pepper. Set aside.
  3. Cook Chicken: Cook marinated chicken in a skillet until fully cooked.
  4. Assemble Stacks: Layer rice, avocado mixture, and chicken in a mold. Press down and lift the mold. Repeat for servings.
  5. Garnish & Serve: Top with cilantro and lime. Serve immediately.

Notes

  • You can use chicken thighs for a juicier alternative.
  • For a spicier dish, add hot sauce or jalapeño to the marinade.
  • This recipe can also be served as a deconstructed rice bowl.
