Ingredients
Scale
Chocolate and Oils
- 35 g Dark chocolate (for melting)
- 35 g Dark chocolate (chopped into small chunks; to mix in)
- 2 tbsp Coconut oil
Dry Ingredients
- 50 g Oat flour
- 20 g Cacao powder
- 1 pinch Sea salt
- 120 g Granulated stevia
- 0.5 tsp Baking powder
Wet Ingredients
- 180 g 0% Fat Free Greek yogurt
- 1 Egg
- 60 ml Skim milk
- 1 tsp Vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) and line an 8×6 inch baking pan with parchment paper to prevent sticking.
- Melt Chocolate and Coconut Oil: Gently melt 35 g of dark chocolate and 2 tablespoons of coconut oil together, either over a double boiler or in short bursts in the microwave. Set aside to cool slightly.
- Mix Dry Ingredients: In a mixing bowl, combine the oat flour, cacao powder, sea salt, granulated stevia, and baking powder. Stir thoroughly to evenly distribute all dry ingredients.
- Blend Wet Ingredients: In a separate bowl, whisk together the fat-free Greek yogurt, egg, skim milk, vanilla extract, and the melted chocolate mixture until smooth and well combined.
- Combine Wet and Dry: Fold the wet ingredients into the dry ingredients gently until just combined; be careful not to overmix. Then, fold in the chopped dark chocolate chunks to add texture and bursts of chocolate.
- Prepare to Bake: Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.
- Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs attached, indicating fudgy brownies.
- Cool and Serve: Allow the brownies to cool completely in the pan before lifting out using the parchment paper. Cut into 12 squares and serve.
Notes
- Do not overbake to keep the brownies moist and fudgy.
- Use parchment paper for easy removal and cleanup.
- Stevia is used as a low-calorie sweetener; adjust according to taste preference.
- Oat flour can be homemade by grinding oats in a blender or food processor.
- For vegan adaptation, substitute the egg with a flax egg and use a plant-based yogurt and milk.
