Guacamole Ingredients
- 2 tbsp finely chopped white onion (or red, brown, yellow)
- 1 tbsp finely chopped jalapeño or serrano chili (adjust to taste)
- 1/2 tsp salt, plus more to taste
- 1/4 cup roughly chopped coriander (cilantro) leaves
- 2 medium avocados (or 1 very large)
- Lime juice, to taste (about 1/4 – 1/2 lime)
- Optional: 1 ripe tomato, peeled, deseeded and chopped
Instructions
- Mash aromatics: Place the chopped onion, jalapeño, salt, and half the coriander on a cutting board and use a fork to mash them together until juicy. Alternatively, use a mortar and pestle to grind them into a paste.
- Add avocado and coriander: Transfer the mashed mixture into a bowl, add the avocado and remaining coriander. Mash everything together to your desired consistency, whether chunky or smooth.
- Taste and adjust: Sample the guacamole and adjust the seasoning by adding more salt for flavor, lime juice for tanginess, or additional chili for spiciness.
- Optional tomato: If using tomato, gently fold it into the guacamole to add freshness and a subtle sweetness.
- Serve: Serve immediately with corn chips or your preferred dipping snacks for a delicious, fresh appetizer.
