Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
- Prepare and Bake Sweet Potatoes: Scrub the sweet potatoes clean, pat them dry, and pierce each several times with a fork. Place them on a rimmed baking sheet and bake for 35 to 45 minutes, or until they are tender when pierced with a fork.
- Cook Ground Turkey: While the sweet potatoes roast, heat a skillet over medium heat and add the olive oil. Once hot, add the ground turkey and cook for 4 to 5 minutes until browned. Sprinkle on the taco seasoning, salt, and black pepper, then cook for another 1 to 2 minutes until the turkey is fully cooked, stirring occasionally.
- Assemble Bowls: Slice open the roasted sweet potatoes and place each on a plate or in a bowl. Use a fork to press the flesh flat.
