Zucchini Skillet:
- 2 medium zucchinis, chopped into half-moons
- 1 red bell pepper, diced
Seasonings:
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
Additional:
- 1 can (14.5 ounces) diced tomatoes, drained
- 1/4 cup chicken broth or water
- 1/2 cup shredded mozzarella or parmesan cheese (optional)
- Fresh parsley or basil for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned. Stir in onion and garlic.
- Add zucchini and red bell pepper, cooking for about 5 minutes until vegetables start to soften.
- Season with Italian seasoning, paprika, red pepper flakes, salt, and pepper, stirring well.
- Pour in diced tomatoes and chicken broth, then reduce heat to medium and let simmer for 8 to 10 minutes.
- Sprinkle with shredded cheese if desired and cover until melted. Garnish with fresh parsley or basil before serving.
