Ingredients

Scale

Ground Turkey Skillet:

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced

Zucchini Skillet:

  • 2 medium zucchinis, chopped into half-moons
  • 1 red bell pepper, diced

Seasonings:

  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Additional:

  • 1/4 cup chicken broth or water
  • 1/2 cup shredded mozzarella or parmesan cheese (optional)
  • Fresh parsley or basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned. Stir in onion and garlic.
  2. Add zucchini and red bell pepper, cooking for about 5 minutes until vegetables start to soften.
  3. Season with Italian seasoning, paprika, red pepper flakes, salt, and pepper, stirring well.
  4. Pour in diced tomatoes and chicken broth, then reduce heat to medium and let simmer for 8 to 10 minutes.
  5. Sprinkle with shredded cheese if desired and cover until melted. Garnish with fresh parsley or basil before serving.

Notes

  • For a dairy-free option, omit the cheese or use a plant-based substitute.
