Description

Instructions

  1. Preheat Grill: Preheat your grill or a grill pan to medium-high heat to get it ready for grilling the vegetables.
  2. Season Vegetables: In a large mixing bowl, toss the zucchini, yellow squash, cherry tomatoes, red onion, and orange bell pepper with olive oil, kosher salt, dried oregano, garlic powder, and dried thyme until evenly coated.
  3. Thread Vegetables: Carefully thread the seasoned vegetables onto skewers, preparing them for grilling.
  4. Grill Vegetables: Place the skewers on the grill and cook for 3 to 5 minutes until grill marks are visible. Flip the skewers over and grill for another 3 to 5 minutes until the vegetables are tender and slightly charred. Remove from heat and let cool for 1 to 2 minutes.
  5. Finish and Garnish: Remove the vegetables from the skewers and arrange on a serving plate. Drizzle with freshly squeezed lemon juice and sprinkle with the optional finely chopped parsley for a fresh accent.
  6. Serve: Serve the grilled vegetable skewers immediately alongside your salmon for a balanced and flavorful meal.
