For the Balsamic Glaze and Chicken Marinade

For the Chicken

- 1 teaspoon Italian seasoning
For the Bruschetta Topping
- 4 slices whole milk mozzarella
- 3 roma tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1/2 cup fresh mozzarella, chopped (Pearl size)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 2 tablespoons balsamic vinegar
Instructions
- Prepare the balsamic glaze: In a small saucepan, combine 1 cup of balsamic vinegar and 2 tablespoons of honey. Bring to a simmer over medium heat and let it reduce until it is thickened to a glaze-like consistency, about 10-15 minutes. Remove from heat and set aside to cool.
- Marinate the chicken: In a bowl, combine the olive oil, salt, pepper, garlic powder, and Italian seasoning. Rub the mixture onto both sides of the chicken breasts and let marinate for at least 10 minutes for enhanced flavor.
- Grill the chicken: Preheat your grill to medium-high heat. Grill the chicken breasts for about 6-8 minutes per side or until fully cooked and juices run clear, reaching an internal temperature of 165°F (74°C).
- Prepare the bruschetta topping: In a bowl, combine the diced roma tomatoes, chopped fresh basil, chopped fresh mozzarella, salt, pepper, garlic powder, and 2 tablespoons of balsamic vinegar. Mix gently to combine.
- Assemble the chicken caprese: Once the chicken is grilled, place a slice of whole milk mozzarella on each chicken breast while still warm, allowing it to slightly melt.
- Add the bruschetta topping: Spoon the prepared tomato and mozzarella mixture over each piece of chicken.
- Drizzle with balsamic glaze: Finally, drizzle the reduced balsamic glaze generously over the assembled chicken caprese.
