Description

This delightful recipe combines the sweetness of grilled apricots with creamy whipped goat cheese and fragrant thyme honey, creating a perfect appetizer or light dessert that’s easy to prepare and bursting with fresh summer flavors.

Ingredients

Scale

Apricots

  • 6 ripe apricots, halved and pitted
  • 1 tablespoon olive oil

Whipped Cheese

  • 4 ounces goat cheese, softened
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon honey, plus extra for drizzling
  • 1 tablespoon lemon juice
  • Pinch of salt

Garnishes

  • 1 teaspoon fresh thyme leaves, plus extra for garnish
  • Fresh cracked black pepper, to taste
  • Chopped pistachios or walnuts (optional for garnish)

Instructions

  1. Prepare the Apricots: Brush the cut sides of the apricot halves with olive oil for a light coating that helps them grill evenly without sticking.
  2. Grill the Apricots: Preheat your grill or grill pan over medium heat. Place the apricots cut side down on the grill and cook for 2 to 3 minutes until grill marks appear and the fruit softens slightly. Remove and let cool slightly.
  3. Whip the Cheese Mixture: In a mixing bowl, combine softened goat cheese, cream cheese, honey, lemon juice, and a pinch of salt. Whip using a hand mixer or whisk until the mixture is light, smooth, and creamy.
  4. Assemble the Dish: Spread a generous spoonful of the whipped goat cheese onto a serving platter or individual plates. Arrange the grilled apricot halves on top with the cut side facing up.
  5. Garnish and Serve: Drizzle more honey over the apricots, sprinkle with fresh thyme leaves, fresh cracked black pepper, and optional chopped nuts. Serve immediately for best flavor and texture.

Notes

  • For a vegan version, substitute goat and cream cheese with plant-based alternatives and use agave syrup instead of honey.
  • This recipe works beautifully with peaches or nectarines as well.
  • Serve as an appetizer, a light dessert, or part of a brunch spread.
