- 6 ripe apricots, halved and pitted

Whipped Cheese

- Pinch of salt
Garnishes
- 1 teaspoon fresh thyme leaves, plus extra for garnish

Instructions
- Prepare the Apricots: Brush the cut sides of the apricot halves with olive oil for a light coating that helps them grill evenly without sticking.
- Grill the Apricots: Preheat your grill or grill pan over medium heat. Place the apricots cut side down on the grill and cook for 2 to 3 minutes until grill marks appear and the fruit softens slightly. Remove and let cool slightly.
- Whip the Cheese Mixture: In a mixing bowl, combine softened goat cheese, cream cheese, honey, lemon juice, and a pinch of salt. Whip using a hand mixer or whisk until the mixture is light, smooth, and creamy.
