Description

  • 1-2 cups vegan chocolate chips
  • 1 cup coconut flour

Wet Ingredients

  • 1 teaspoon pure vanilla extract
  • 4 tablespoons pure maple syrup
  • 2-3 tablespoons dark rum
  • 3/4 cup water


Instructions

  1. Prepare the Filling: In a medium bowl, whisk together the dry ingredients — coconut flour, cocoa powder, and brown sugar. Then stir in the vanilla extract, maple syrup, dark rum, and water until the mixture is smooth. Place the bowl in the refrigerator to chill and allow the flavors to meld.
  2. Chop the Walnuts: Finely chop the walnuts so they are in very small pieces. Use a food processor pulse carefully to avoid pulverizing or place walnuts in a Ziploc bag and crush with a rolling pin until finely broken.
  3. Form the Balls: Take the chilled filling mixture and form it into small balls about 3/4 to 1 inch in diameter. Smaller sized balls work best for these truffles.
  4. Melt the Chocolate: Gently melt 1 cup of vegan chocolate chips in 15-second bursts in the microwave, stirring in between to prevent burning. Alternatively, melt the chocolate using a double boiler for more control. Melt additional chocolate as needed when coating.
  5. Coat and Roll: Dip each filling ball into the melted chocolate, then immediately roll it in the finely chopped walnuts to coat. Place the finished balls on a plate or baking sheet.
  6. Set the Rum Balls: Pop the coated rum balls into the freezer for about 20 minutes to let the chocolate set. Once set, transfer the rum balls to a sealed container and store them in the refrigerator. Take them out just before serving to enjoy at the best texture.
