Description

A quick and easy garlic white bean mash made with creamy cannellini beans, aromatic garlic, and a splash of vegetable stock, perfect as a flavorful side dish or spread.

  • 1 tbsp extra virgin olive oil
  • 1 garlic clove, minced
  • 1 can cannellini beans (15oz / 420g), drained
  • 1/3 cup vegetable stock
  • 1/2 lemon zest (optional)

Instructions

  1. Heat the oil and garlic: Heat 1 tablespoon of extra virgin olive oil in a pan over medium-high heat. Add the minced garlic and sauté until it is fragrant, about 30 seconds to 1 minute, being careful not to burn it.
  2. Add beans, stock, and lemon zest: Stir in the drained cannellini beans, 1/3 cup vegetable stock, and optional 1/2 teaspoon lemon zest. Mix well to combine.
  3. Simmer and mash: Let the mixture simmer for 2 minutes to heat through and blend flavors. Then, use a fork or potato masher to mash the beans until you reach your desired consistency – creamy but with some texture.
  4. Season and serve: Season the mash with salt and freshly ground black pepper to taste. Serve warm as a side dish or spread.
