Description

This Garlic Parmesan Chicken & Potatoes recipe combines juicy, seasoned chicken breast cubes with crispy air-fried potatoes, all coated in a rich garlic parmesan sauce and topped with melted mozzarella cheese. Perfect for a quick, flavorful dinner, this dish uses a mix of air frying, stovetop cooking, and broiling to deliver a satisfying combination of textures and savory flavors.

Ingredients

Scale

For the Potatoes

  • 4-5 small/medium-sized potatoes, washed, peeled, and cut into small cubes
  • Olive oil, 2 tablespoons
  • Salt, ½ teaspoon plus extra for seasoning
  • Black pepper, ½ teaspoon plus extra for seasoning
  • Garlic powder, 1 teaspoon
  • Paprika, 1 teaspoon

For the Chicken

  • 2 chicken breasts, cut into cubes
  • Butter, 2 tablespoons
  • Salt, ½ teaspoon
  • Black pepper, ½ teaspoon
  • Paprika, 1 teaspoon
  • Onion powder, 1 teaspoon
  • Italian seasoning, 1 teaspoon
  • Minced garlic, 2 tablespoons
  • Buffalo Wild Wings Garlic Parmesan Sauce, amount to taste (approximately ¼ cup)
  • Shredded mozzarella cheese, 1 cup

Instructions

  1. Prepare and Air Fry Potatoes: Wash, peel, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika. Air fry the potatoes at 400°F for about 20 minutes, shaking the basket a couple of times during cooking to ensure even crispiness.
  2. Cook the Chicken: While the potatoes are cooking, cut the chicken breasts into cubes. Melt 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken cubes to the skillet and cook until they are browned and fully cooked through. Season the chicken with salt, pepper, paprika, onion powder, and Italian seasoning to enhance the flavor.
  3. Add Garlic and Sauce: Once the chicken is cooked, add the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet. Stir well to coat the chicken evenly with the sauce. Then add the cooked potatoes into the skillet and toss everything together to combine all flavors.
  4. Melt the Cheese: Top the chicken and potato mixture with shredded mozzarella cheese. To melt the cheese, place the skillet under the oven broiler for a few minutes until the cheese is bubbly and golden. Alternatively, cover the skillet with a lid and allow it to sit on the stovetop over low heat until the cheese melts thoroughly.
  5. Serve and Enjoy: Serve the garlic parmesan chicken and potatoes immediately while hot and cheesy for a delicious, comforting meal.

Notes

  • You can substitute the Buffalo Wild Wings Garlic Parmesan Sauce with any garlic parmesan sauce of your choice or make a homemade version for a personalized flavor.
  • To save time, use pre-cut frozen potatoes and adjust air frying time accordingly.
  • If you don’t have an air fryer, bake the potatoes in the oven at 425°F for 25-30 minutes, flipping halfway through, until crispy.
  • Use a lid on the skillet to melt the cheese if you prefer to avoid broiling or do not have an oven-safe skillet.
  • Adjust seasoning amounts to your taste preference, especially salt and spice levels.
  • For extra crispiness, soak potato cubes in cold water for 30 minutes before cooking to remove excess starch.
  • This dish can be doubled easily to serve more people.
