Description

This Garlic Mushrooms Cauliflower Skillet is a quick and flavorful vegetable dish perfect as a side or light main. Tender sautéed cauliflower florets combine with garlicky, browned mushrooms and fragrant herbs, all cooked together in a skillet for a deliciously simple and healthy meal ready in just 20 minutes.

Ingredients

Scale

Vegetables

  • 1 medium head of cauliflower, cut into florets
  • 8 oz (about 2 cups) mushrooms, sliced (button, cremini, or your choice)
  • 3 cloves garlic, minced
  • Fresh parsley, chopped, for garnish (optional)

Seasonings and Oils

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon dried thyme (or fresh thyme, if available)
  • 1/4 teaspoon red pepper flakes (optional, for a little heat)
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice (optional, for brightness)

Instructions

  1. Cook the Cauliflower: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cauliflower florets and sauté for 5-7 minutes, stirring occasionally, until they begin to brown and become tender. Remove from the skillet and set aside.
  2. Sauté the Garlic and Mushrooms: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Add the sliced mushrooms and cook for another 5-7 minutes, until the mushrooms release their moisture and begin to brown.
  3. Combine and Season: Return the cauliflower to the skillet with the mushrooms. Stir in the thyme, red pepper flakes (if using), and season with salt and pepper to taste. Continue cooking for another 3-5 minutes, allowing the flavors to meld together.
  4. Add Lemon (Optional): For a bright, fresh finish, add the lemon juice and stir to combine.
  5. Serve: Garnish with chopped fresh parsley, if desired, and serve hot as a side dish or light main course.

Notes

  • You can substitute any type of mushrooms you prefer or have on hand.
  • Adjust the red pepper flakes to your preferred spice level or omit for no heat.
  • This dish pairs well with grilled chicken or fish for a complete meal.
  • Use fresh thyme for a more vibrant herbal flavor if available.
  • Leftovers store well and can be reheated gently in a skillet or microwave.
