Ingredients
Scale
Chicken and Seasoning
- 1 lb chicken breast, cut into bite-sized pieces
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Vegetables
- 2 cups broccoli florets
- 1 cup grape or cherry tomatoes, halved
- 2 cups fresh spinach
- 3 garlic cloves, minced
Dairy and Oils
- 2 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
- 2 oz cream cheese
Instructions
- Heat Olive Oil: Heat olive oil in a large skillet over medium-high heat to prepare for cooking the chicken.
- Cook Chicken: Add the chicken pieces to the skillet and season with Italian seasoning, salt, and pepper. Cook for about 5 minutes until the chicken is golden brown and cooked through.
- Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, enhancing the flavor of the dish.
- Cook Vegetables: Add broccoli florets and halved tomatoes to the skillet. Cook for 5 more minutes until the broccoli is tender but still crisp.
- Add Spinach and Cheese: Mix in the fresh spinach, shredded mozzarella, and cream cheese. Stir continuously until the cheese melts and the spinach wilts, creating a creamy sauce.
- Serve: Remove from heat and serve immediately while hot and creamy.
Notes
- Use fresh garlic for the best flavor, but garlic powder can be substituted in a pinch.
- For extra creaminess, add a splash of chicken broth or milk when adding the cream cheese.
- Serve this dish over rice, pasta, or cauliflower rice for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
