Instructions
- Cook the Vegetables: Heat olive oil in a skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Sauté for about 7 minutes until the vegetables are tender and nicely cooked.
- Set Aside Vegetables: Transfer the cooked vegetable mixture to a bowl and set aside for assembling the quesadillas.
- Assemble the Quesadillas: Lightly coat the skillet again with cooking spray. Place one whole wheat tortilla in the pan.
