Instructions

  1. Prepare zucchini: Place the shredded zucchini in a colander and toss with ½ teaspoon of salt. Let it stand in the sink for 10 minutes to draw out excess moisture. Then transfer the zucchini to a clean tea towel and squeeze out as much liquid as possible to ensure the fritters are not soggy.
  2. Make batter: In a medium mixing bowl, combine the flour, beaten eggs, shredded cheese, chopped chives, salt, and pepper. Mix until the batter is smooth, then fold in the drained zucchini thoroughly to evenly distribute all ingredients.
  3. Cook fritters: Heat olive oil in a large skillet over medium-high heat. Using a tablespoon, drop spoonfuls of the batter into the hot oil, and flatten each fritter slightly with the back of the spoon. Fry for about 2 minutes on each side or until golden and crispy. Remove from the skillet and drain on paper towels. Serve warm, garnished with additional chopped chives if desired.
