- 4 ounces goat cheese, crumbled
- 1 1/2 cups chopped cucumber
- 1 1/2 cups chopped tomatoes
- 3 cups cooked chickpeas (or 3 cups canned, rinsed chickpeas)
Instructions
- Cook Orzo: Cook the orzo according to package directions until tender. Drain the orzo and rinse it with cold water to stop the cooking process and cool it down. Set aside.
- Make Vinaigrette: While the orzo is cooking, prepare the dressing by combining olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper in a small mason jar. Seal and shake vigorously until well combined and emulsified.
- Assemble Salad: In a large bowl, add the cooked orzo, crumbled goat cheese, chopped cucumber, chopped tomatoes, and chickpeas. Pour about three-quarters of the oregano vinaigrette over the mixture and stir gently to combine all ingredients evenly.
- Chill and Serve: Cover the salad and chill it in the refrigerator for at least 1 hour to allow flavors to meld. Before serving, stir the salad and add the remaining vinaigrette if desired for extra flavor.
