Dressing

  • 6 tablespoons olive oil
  • 4 tablespoons red wine vinegar
  • 2 teaspoons dried oregano
  • 2 teaspoons minced garlic

Salad Mix

  • 4 ounces goat cheese, crumbled
  • 1 1/2 cups chopped cucumber
  • 1 1/2 cups chopped tomatoes
  • 3 cups cooked chickpeas (or 3 cups canned, rinsed chickpeas)


Instructions

  1. Cook Orzo: Cook the orzo according to package directions until tender. Drain the orzo and rinse it with cold water to stop the cooking process and cool it down. Set aside.
  2. Make Vinaigrette: While the orzo is cooking, prepare the dressing by combining olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper in a small mason jar. Seal and shake vigorously until well combined and emulsified.
  3. Assemble Salad: In a large bowl, add the cooked orzo, crumbled goat cheese, chopped cucumber, chopped tomatoes, and chickpeas. Pour about three-quarters of the oregano vinaigrette over the mixture and stir gently to combine all ingredients evenly.
  4. Chill and Serve: Cover the salad and chill it in the refrigerator for at least 1 hour to allow flavors to meld. Before serving, stir the salad and add the remaining vinaigrette if desired for extra flavor.

  • Using canned chickpeas saves time, just be sure to rinse them well to reduce sodium.
