Ingredients
Scale
Gelatin and Pudding Base
- 3 oz box orange gelatin
- 3 oz box cook and serve vanilla pudding (not instant)
- 2 cups water
Add-ins
- 8 oz whipped topping, thawed
- 11 oz can mandarin oranges, drained
- Mini marshmallows (amount as desired, typically 1 cup)
- Shredded coconut (about 1/2 cup)
- Crushed pineapple, drained (about 1/2 cup)
- Chopped walnuts or pecans (about 1/2 cup)
Instructions
- Preparing the Gelatin and Pudding: In a saucepan, combine the orange gelatin, vanilla pudding mix, and 2 cups of water. Heat over medium heat, stirring frequently, until the mixture thickens and becomes clear, which should take approximately 5 minutes.
- Let It Set in the Fridge: Pour the hot gelatin and pudding mixture into a bowl. Cover and refrigerate for at least 4 hours or overnight to allow it to fully set.
- Mixing in the Whipped Topping: Once chilled and set, use a potato masher or hand mixer to break up the gelatin mixture. Gently fold in the thawed whipped topping until the mixture is smooth and fluffy.
- Gently Incorporate the Oranges: Drain the mandarin oranges well and carefully fold them into the creamy mixture, being careful not to break the fruit pieces.
- Adding Additional Ingredients: Fold in mini marshmallows, shredded coconut, crushed pineapple (drained), and chopped walnuts or pecans to add extra texture and flavor.
- Final Chilling and Serving: Return the completed salad to the refrigerator and chill for at least 1 hour before serving. Serve cold and enjoy the refreshing, creamy, and fruity salad.
Notes
- Ensure the canned fruits are well drained to avoid excess moisture in the salad.
- For a nut-free version, omit the walnuts or pecans.
- Mini marshmallows add fluffiness—adjust the quantity based on your preference.
- Use fresh whipped topping or stabilized whipped cream for the best texture.
- This salad tastes best when served chilled and can be made a day in advance.
