Description

Crispy and flavorful Easy Fried Corn Fritters made from sweet corn, cheddar cheese, and fresh cilantro. These golden fritters are pan-fried to perfection and make for a delicious appetizer or side dish. Served best with sour cream or green onions, they come together quickly and are perfect for sharing.

Ingredients

Scale

Fritter Batter

  • 3 cups sweet kernel corn (dried)
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon sugar
  • â…“ cup finely chopped fresh cilantro
  • 2 large eggs (whisked)
  • â…“ cup whole milk
  • 1 cup shredded cheddar cheese

For Frying

  • 2 tablespoons avocado oil

For Serving (optional)

  • Green onions
  • Sour cream

Instructions

  1. Make base: In a large bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, black pepper, and sugar until evenly combined. Add the sweet corn, chopped cilantro, whisked eggs, whole milk, and shredded cheddar cheese. Stir until the batter is well combined. For best texture and flavor, allow the batter to rest for 15-20 minutes if time permits.
  2. Heat oil: Place a large stainless steel or cast iron skillet over medium heat. Add 1 tablespoon of avocado oil and heat until shimmering, indicating it is hot enough for frying.
  3. Pan fry fritters: Using a measuring cup, scoop approximately one-third cup of batter for each fritter. Carefully place 4-5 fritters evenly spaced in the hot skillet. Press each fritter lightly with the back of a spatula to ensure even cooking. Cook for 7-8 minutes total, flipping halfway through, until the fritters are golden brown, crispy on the outside, and fluffy inside.
  4. Serve: Remove the cooked fritters from the skillet and drain on paper towels if desired. Serve warm with a dollop of sour cream or homemade aioli and a sprinkle of fresh green onions for extra flavor.

Notes

  • Allowing the batter to rest helps hydrate the flour and results in more tender fritters.
  • You can use fresh or frozen corn if fresh sweet kernel corn is not available; just thaw frozen corn before use.
  • Adjust seasoning to taste, adding more salt or spices if desired.
  • For a dairy-free version, substitute milk with a plant-based milk and omit the cheese or use a dairy-free alternative.
  • Use a non-stick or well-seasoned cast iron skillet for best frying results and easier flipping.
